Description

Ingredients

  • 4 chicken leg quarters
  • ¼ cup olive oil
  • 2 tablespoons lemon juice
  • 3 cloves minced garlic
  • 1 teaspoon paprika
  • 1 teaspoon italian seasoning
  • 1 teaspoon kosher salt
  • 1 teaspoon chicken bouillon base – i like to use better than bouillon, roasted chicken flavor
  • ½ teaspoon black pepper
  • ½ teaspoon onion powder
  • ½ teaspoon chili powder
  • Olive oil spray


Instructions

  1. Whisk together olive oil, lemon juice, garlic, paprika, Italian seasoning, salt, chicken bouillon, pepper, onion powder, and chili powder until well mixed.
  2. Place chicken quarters in a large zip-lock bag or shallow dish, then pour the marinade over, ensuring each piece is well coated.
  3. Marinate for at least one hour, preferably overnight.
  4. Preheat the air fryer to 385°F.
  5. Remove chicken from marinade and place skin side down in the basket. Brush with some marinade mixture and cook for 15 minutes.
  6. Flip chicken over, lightly spray tops with cooking spray, and cook for an additional 10-12 minutes.
  7. Check the internal temperature, ensuring it reaches 165°F. Sprinkle with coarse salt and let the chicken rest for a few minutes before serving.

Notes

Letting the chicken marinate overnight enhances the flavors immensely.
Ensure the chicken pieces are evenly coated for the best flavor during cooking.
Using a meat thermometer helps avoid undercooking or overcooking the chicken.
