- 4 large Egg Whites
- 2½ cups Superfine Blanched Almond Flour
- ½ cup Granulated Sugar
- 2 teaspoons Almond Extract
- 1 cup Confectioners' Sugar for coating
Instructions
- Preheat oven to 350°F (177°C) and line two sheet pans with parchment paper.
- In a stand mixer, whip egg whites on high speed until stiff peaks form (3-5 minutes).
- Gently fold in almond flour, granulated sugar, and almond extract until smooth.
- Scoop tablespoon portions of dough, roll into balls, and coat in confectioners' sugar.
- Press down lightly on balls and bake for 18-20 minutes until golden and crackled.
- Cool on sheet pans for a few minutes before transferring to a wire rack.
Notes
Store cookies in an airtight container at room temperature for up to a week.
For longer storage, refrigerate cookies for two weeks or freeze for three months.
Reheat cookies in a 300°F oven for 5-7 minutes to restore softness.
