  • 1 tbsp salt
  • 16 oz. angel hair pasta (uncooked)
  • 1 tbsp garlic (minced)
  • ½ tsp dried oregano
  • ¼ cup olive oil
  • lbs roma tomatoes (diced)
  • 1 tsp vegetable bouillon
  • 1 cup water (hot, for the bouillon)
  • ½ cup pasta water
  • 1 tsp salt
  • ¼ tsp black pepper (freshly cracked)
  • 2 Tbsp fresh basil (minced)
  • ½ tbsp fresh parsley (minced)


Instructions

  1. Gather all ingredients. Bring a large pot of water with 1 tablespoon of salt to a boil.
  2. Dice the Roma tomatoes, keeping the seeds but discarding tougher stem areas.
  3. Mince the garlic after dicing the tomatoes.
  4. Once the salted water is boiling, add the angel hair pasta and cook for 2 minutes, or until just tender. Check at the 2-minute mark.
  5. After cooking, reserve ½ cup of pasta water, strain the pasta, and toss it with 1 tablespoon of olive oil. Cover with a clean damp towel.
  6. In a large sauté pan over medium-low heat, combine garlic, oregano, and olive oil. Cook for 2 minutes until fragrant.
  7. Add diced Roma tomatoes and stir. Increase heat to medium.
  8. Mix 1 teaspoon of bouillon with 1 cup of hot water for vegetable broth. After 5 minutes of cooking the tomatoes, add the broth and reserved pasta water. Stir and let it simmer.
  9. Mince fresh basil and parsley.
  10. Season the tomato sauce with 1 teaspoon of salt, black pepper, and fresh herbs.
  11. Remove from heat, add the pasta, and stir well, ensuring the sauce coats the pasta. Serve immediately or after allowing it to soak longer in the sauce.

Notes

Adjust seasoning to taste; more fresh herbs can enhance flavor.
For a spicier kick, consider adding red pepper flakes.
Serve with grated cheese for an added layer of flavor.
