Description

These Antipasto Skewers are a burst of flavors with mozzarella, olives, and salami! Perfect for gatherings or a quick snack, they’re easy to prepare and always a hit!


Ingredients

Scale
  • 36 pitted olives
  • ½ pound block mozzarella cheese, diced
  • 12 cherry tomatoes
  • 24 tortellini pasta (½ package)
  • 12 slices salami
  • 12 slices pepperoni
  • ½ cup Italian dressing
  • Balsamic vinaigrette


Instructions

  • Cook tortellini in boiling water for 2-3 minutes, then drain and rinse.
  • Toss cooked tortellini in ¼ cup of Italian dressing and set aside.
  • Cut mozzarella cheese into bite-sized cubes and marinate with remaining dressing.
  • Prepare olives and halve cherry tomatoes; fold salami and pepperoni slices for presentation.
  • Assemble skewers by threading olives, mozzarella, tomato, tortellini, salami, and pepperoni in preferred order.
  • Drizzle skewers with balsamic vinaigrette before serving; optionally chill for enhanced flavor.

Notes

Use fresh mozzarella for the best flavor and texture.
