Ingredients
Scale
- 1½ cups granny smith apples, peeled and chopped
- ½ cup brown sugar
- 1 teaspoon ground cinnamon
- ⅛ teaspoon ground nutmeg
- ½ cup unsalted butter, softened
- ½ cup granulated sugar
- ¼ cup brown sugar
- 2 eggs
- ⅓ cup greek yogurt
- 1 teaspoon pure vanilla extract
- ½ cup milk
- 1¾ cup all purpose flour
- 1 teaspoon ground cinnamon
- ¼ teaspoon ground nutmeg
- 1 teaspoon baking powder
- ½ teaspoon baking soda
Instructions
- Prepare the apples by peeling and chopping them into bite-sized pieces. Toss the apples with sugar, cinnamon, and nutmeg, then set aside.
- Preheat your oven to 350ºF and line a 9×5-inch loaf pan with parchment paper.
- In a large bowl, cream together the softened butter, granulated sugar, and brown sugar using an electric mixer. Incorporate the eggs one at a time, mixing well after each addition. Stir in the yogurt, vanilla, and milk until combined.
- Sift the flour, cinnamon, nutmeg, baking powder, and baking soda over the wet mixture, then stir until just combined.
- Pour half of the batter into the loaf pan. Layer half of the apples on top, then pour in the remaining batter followed by the rest of the apples.
- Bake for 60-70 minutes, covering with aluminum foil halfway through to prevent over-browning.
- Once baked, let the bread rest in the pan for about 10 minutes, then move it to a wire rack to cool completely before slicing.
Notes
For a sweeter flavor, you can increase the brown sugar slightly.
Ensure the apples are well coated with sugar and spices for maximum flavor.
Baking times may vary; check for doneness by inserting a toothpick.
