  • ¼ cup brown sugar
  • 2 eggs
  • ⅓ cup greek yogurt
  • 1 teaspoon pure vanilla extract
  • ½ cup milk
  • 1¾ cup all purpose flour
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda


Instructions

  1. Prepare the apples by peeling and chopping them into bite-sized pieces. Toss the apples with sugar, cinnamon, and nutmeg, then set aside.
  2. Preheat your oven to 350ºF and line a 9×5-inch loaf pan with parchment paper.
  3. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar using an electric mixer. Incorporate the eggs one at a time, mixing well after each addition. Stir in the yogurt, vanilla, and milk until combined.
  4. Sift the flour, cinnamon, nutmeg, baking powder, and baking soda over the wet mixture, then stir until just combined.
  5. Pour half of the batter into the loaf pan. Layer half of the apples on top, then pour in the remaining batter followed by the rest of the apples.
  6. Bake for 60-70 minutes, covering with aluminum foil halfway through to prevent over-browning.
  7. Once baked, let the bread rest in the pan for about 10 minutes, then move it to a wire rack to cool completely before slicing.

Notes

For a sweeter flavor, you can increase the brown sugar slightly.
