- ¼ cup pure maple syrup
- ¼ cup avocado oil
- 2 tsp pure vanilla extract
- 2 ½ cups finely ground almond flour
- 1 cup tapioca flour
- 1 tbsp pumpkin pie spice or apple pie spice
- 2 tsp baking powder
- ½ tsp sea salt
- 1.5 tbsp granulated cane sugar
- 1 tsp ground cinnamon
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
- In a small saucepan, reduce apple cider over medium heat until thickened to about ⅓ cup.
- Whisk together reduced cider, eggs, maple syrup, avocado oil, and vanilla in a bowl.
- In another bowl, combine almond flour, tapioca flour, spices, baking powder, salt, and sugar.
- Fold the dry mixture into the wet ingredients gently until just combined.
- Spoon the batter into the loaf pan and smooth the top.
- Bake for 45-50 minutes or until a toothpick comes out clean. Let cool before serving.

For a sweeter finish, sprinkle powdered sugar on top after cooling.
