Description

This Apple Cider Donut Bread features warm spices, a moist texture, and the delightful taste of fall. Enjoy it for breakfast or as a sweet snack any time of day!


Ingredients

  • 1 cup apple cider (reduced to ⅓ cup)
  • 2 large eggs
  • ¼ cup pure maple syrup
  • ¼ cup avocado oil
  • 2 tsp pure vanilla extract
  • 2 ½ cups finely ground almond flour
  • 1 cup tapioca flour
  • 1 tbsp pumpkin pie spice or apple pie spice
  • 2 tsp baking powder
  • ½ tsp sea salt
  • 1.5 tbsp granulated cane sugar
  • 1 tsp ground cinnamon


Instructions

  • Preheat the oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  • In a small saucepan, reduce apple cider over medium heat until thickened to about ⅓ cup.
  • Whisk together reduced cider, eggs, maple syrup, avocado oil, and vanilla in a bowl.
  • In another bowl, combine almond flour, tapioca flour, spices, baking powder, salt, and sugar.
  • Fold the dry mixture into the wet ingredients gently until just combined.
  • Spoon the batter into the loaf pan and smooth the top.
  • Bake for 45-50 minutes or until a toothpick comes out clean. Let cool before serving.

Notes

Check the freshness of your baking powder to ensure a good rise.
For a sweeter finish, sprinkle powdered sugar on top after cooling.
