- 3 lbs pork tenderloin
- 1 pound regular-cut bacon, not thick-cut
- 5 garlic cloves, minced
- 1/4 cup dijon
- 1/4 cup brown sugar
- 1 tablespoon apple cider vinegar
- 1/2 tablespoon dried rosemary
- 1 teaspoon garlic powder
- Kosher salt and pepper
Instructions
- Preheat the oven to 425˚F.
- Prepare a baking sheet lined with foil or parchment paper and coat it with cooking spray.
- Arrange the bacon on the baking sheet, overlapping the edges slightly.
- In a small bowl, combine minced garlic, Dijon mustard, brown sugar, apple cider vinegar, dried rosemary, garlic powder, salt, and pepper.
- Spread this mixture over the pork tenderloin and place it at the center of the bacon strips. Fold the bacon strips over the pork, overlapping the ends to wrap it completely.
- Secure the bacon with kitchen twine around the tenderloin.
- Roast in the oven for 25-30 minutes until the internal temperature reaches 140˚F.
- Using the broiler, broil for 1-2 minutes to caramelize the bacon, being vigilant to prevent burning.
- Take it out of the oven and let the tenderloin rest for 10-15 minutes.
- Slice and serve.
Notes
Choose regular-cut bacon for best results, as thick-cut may not cook evenly.
