- 1½ cups (360 ml) warm water
- ½ cup (120 ml) warm milk
- 4 tbsps (57 g) butter, melted
- 2 large eggs, room temperature
- 1 tbsp (9 g) rapid-rise yeast
- 2 tbsps (25 g) granulated sugar
- 6-6¾ cups (720-810 g) bread flour
- 3 tbsps (24 g) everything bagel seasoning
- 1 tbsp (15 g) kosher salt
- 1 large egg
- 1 tbsp (15 ml) milk
- 2-3 tbsps (16-24 g) everything bagel seasoning
Instructions
- In a stand mixer bowl, combine warm water, warm milk, melted butter, eggs, yeast, and sugar. Stir briefly with a fork until mixed.
- Add 6 cups of bread flour, bagel seasoning, and kosher salt. Attach the dough hook and mix on low speed until the dough combines around the hook. If needed, add more flour gradually until a soft, slightly tacky dough forms. Knead for 4-5 minutes after clearing the bowl to develop gluten.
- Lightly spray the mixing bowl, return the dough, cover tightly with plastic wrap, and let it rise in a warm place until doubled, about 1 hour.
- Prepare a baking sheet with parchment paper and set aside.
- Turn risen dough onto a clean surface, divide into 18 equal pieces, roll into smooth balls, and arrange on the baking sheet in a 6-by-3 layout.
- Cover the rolls with greased plastic wrap and let rise again until nearly doubled, about 30-45 minutes. Preheat oven to 350°F (177°C) during this time.
- In a bowl, whisk together egg and milk for the egg wash. Brush the tops of the rolls with the egg wash and sprinkle with everything bagel seasoning.
- Bake for 18-23 minutes until golden brown on top and fully baked on the bottom. Transfer to a wire rack to cool slightly.
- Serve warm, optionally with cream cheese.
Notes
Ensure the water is warm but not hot to avoid killing the yeast.
For a more intense flavor, let the rolls cool before serving and spread cream cheese on top.
