Description

These Baked BBQ Chicken Sliders are a delightful combination of tender chicken mixed with tangy BBQ sauce, topped with creamy coleslaw. Perfect for a quick dinner or a fun gathering, these sliders are sure to impress with their irresistible flavor and easy preparation.

  • ¼ cup mayonnaise
  • 1 ½ tablespoons apple cider vinegar
  • ½ tablespoon granulated sugar
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup shredded red cabbage
  • 1 cup shredded carrots
  • 2 ½ cups shredded cooked chicken
  • 1 cup bbq sauce
  • ½ cup shredded cheddar cheese
  • 1 package brioche slider rolls or hawaiian rolls 12-count
  • 2 tablespoons salted butter melted
  • 1 clove garlic grated
  • 1 tablespoon chopped green onions


Instructions

  1. Prepare the coleslaw by whisking together mayonnaise, apple cider vinegar, sugar, salt, and pepper. Mix in the shredded cabbage and carrots until well coated, then refrigerate.
  2. Preheat the oven to 350°F and grease a 9×13 baking dish with nonstick cooking spray.
  3. In a large bowl, combine shredded chicken, BBQ sauce, and cheddar cheese, mixing thoroughly to create the filling.
  4. Slice the slider rolls in half horizontally, keeping them in one piece. Place the bottom half in the prepared dish and spread the chicken mixture evenly over it. Place the top half of the rolls back on.
  5. Cover the baking dish tightly with aluminum foil and bake for 25 minutes.
  6. While the sliders bake, mix melted butter, grated garlic, and chopped green onions in a bowl. Once 25 minutes are up, remove the foil, brush the sliders with the butter mixture, and bake uncovered for an additional 5 minutes.
  7. After baking, remove the top layer of buns, add a generous layer of coleslaw, replace the tops, and slice into individual sliders.

Notes

Feel free to add your favorite seasonings to the chicken mixture for extra flavor.
For a spicier kick, consider adding jalapeños or hot sauce to the BBQ mixture.
Use any leftover coleslaw as a side dish or alternative topping.
