Ingredients
Scale
- 2 pounds boneless skinless chicken thighs
- 2 tablespoons olive oil or avocado oil
- 2 teaspoons dried italian seasoning
- 1 ½ teaspoons brown sugar
- 1 teaspoon salt
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- ½ teaspoon dry mustard powder
- ⅛ teaspoon chipotle chile pepper powder, optional
- freshly ground black pepper, to taste
Instructions
- Preheat your oven to 400°F and position the oven rack in the center. Line a rimmed baking sheet with foil or parchment paper.
- Trim any excess fat from the chicken thighs if desired. Pat them dry and place them in a large bowl.
- Drizzle the chicken with oil and add all the herbs and seasonings. Toss the chicken until evenly coated with the mixture.
- Transfer the seasoned chicken to the prepared baking sheet, making sure to scrape any residual oil and seasonings from the bowl onto the chicken.
- Insert an oven-safe thermometer into the thickest part of one chicken thigh. Bake for 20 to 30 minutes, or until the internal temperature reaches 165°F. Serve immediately.
Notes
For extra flavor, marinate the chicken in the seasoning mixture for a few hours or overnight in the refrigerator.
Feel free to adjust the spices according to your taste; add more paprika for a spicier kick!
