  • 2 pounds boneless skinless chicken thighs
  • 2 tablespoons olive oil or avocado oil
  • 2 teaspoons dried italian seasoning
  • 1 ½ teaspoons brown sugar
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon dry mustard powder
  • ⅛ teaspoon chipotle chile pepper powder, optional
  • freshly ground black pepper, to taste


Instructions

  • Preheat your oven to 400°F and position the oven rack in the center. Line a rimmed baking sheet with foil or parchment paper.
  • Trim any excess fat from the chicken thighs if desired. Pat them dry and place them in a large bowl.
  • Drizzle the chicken with oil and add all the herbs and seasonings. Toss the chicken until evenly coated with the mixture.
  • Transfer the seasoned chicken to the prepared baking sheet, making sure to scrape any residual oil and seasonings from the bowl onto the chicken.
  • Insert an oven-safe thermometer into the thickest part of one chicken thigh. Bake for 20 to 30 minutes, or until the internal temperature reaches 165°F. Serve immediately.

Notes

For extra flavor, marinate the chicken in the seasoning mixture for a few hours or overnight in the refrigerator.
