  • 1 large Gala apple, peeled and cored
  • ½ cup light brown sugar
  • 2 cups all-purpose flour
  • 1 tsp apple pie spice blend
  • ⅓ cup unsalted butter, softened
  • ¾ cup granulated sugar
  • 1 large egg, room temperature
  • 1 tsp vanilla extract
  • ½ cup buttermilk
  • 1 cup powdered sugar

  • Add egg and vanilla to the butter mixture and mix until blended.
  • Fold half of the dry ingredients into the wet mixture, then add buttermilk.
  • Combine the remaining dry ingredients and fold just until mixed.
  • Spread half of the batter in the loaf pan, followed by two-thirds of the apple filling, then top with remaining batter.
  • Spoon the leftover apple mixture on top and swirl gently with a knife.
  • Bake for 30 minutes uncovered, then cover with foil and bake an additional 20 minutes until a toothpick comes out clean.
  • Cool in the pan for 10-20 minutes, then transfer to a cooling rack.
