Description

Ingredients

  • 1 box yellow cake mix
  • 1/3 cup vegetable oil
  • 3 large eggs
  • 5 large bananas, brown and mashed


Instructions

  1. Preheat your oven to 350 degrees F.
  2. In a mixing bowl, combine the cake mix, eggs, and vegetable oil until a thick batter forms.
  3. In a separate dish, mash the bananas, leaving some chunks for texture.
  4. Gently fold the mashed bananas into the batter. Optionally, you can add 1/2 cup of crushed nuts or chocolate chips.
  5. Prepare two loaf pans by spraying them with non-stick spray, or use one loaf pan and fill 8 muffin cups three-quarters full.
  6. Pour the batter into the prepared loaf pan(s). Bake for approximately 43-45 minutes, or until a toothpick inserted into the center comes out mostly clean with a few moist crumbs attached.
  7. Once baked, remove from the oven and let cool on a cooling rack for about 15 minutes. Carefully flip the loaves over and remove them from the pans. Allow them to cool completely before slicing.

Notes

For added flavor, consider mixing in nuts or chocolate chips.
Store any leftovers in an airtight container to maintain freshness.
