Description

These BBQ Chicken Quesadillas are a delightful mix of crispy tortillas, tender BBQ chicken, smoky bacon, and gooey cheese, ready in just 25 minutes. Perfect for any occasion!


Ingredients

  • 4 large flour tortillas
  • 2 cups shredded rotisserie chicken
  • 1/3 cup BBQ sauce
  • 6 strips bacon (cooked and crumbled)
  • 2 cups shredded sharp cheddar cheese
  • 1/4 red onion (thinly sliced)
  • 2 tablespoons fresh cilantro (chopped)
  • 2 tablespoons butter
  • Kosher salt


Instructions

  • Combine shredded rotisserie chicken with BBQ sauce.
  • Heat a skillet and melt butter, adding kosher salt.
  • Place one tortilla in the skillet, layer chicken, bacon, cheese, onion, and cilantro on half.
  • Fold the tortilla and cook until golden brown, then flip to cook the other side.
  • Keep cooked quesadilla warm while repeating with remaining tortillas.
  • Cut into wedges and serve with extra BBQ sauce or ranch.

Notes

Use room temperature cheese for better melting.
Store leftovers in an airtight container for up to 3 days in the fridge.
For extra crunch, consider grilling the quesadillas rather than pan-frying.
