- 2 cups shredded rotisserie chicken
- 1/3 cup BBQ sauce
- 6 strips bacon (cooked and crumbled)
- 2 cups shredded sharp cheddar cheese
- 1/4 red onion (thinly sliced)
- 2 tablespoons fresh cilantro (chopped)
- 2 tablespoons butter
- Kosher salt
Instructions
- Combine shredded rotisserie chicken with BBQ sauce.
- Heat a skillet and melt butter, adding kosher salt.
- Place one tortilla in the skillet, layer chicken, bacon, cheese, onion, and cilantro on half.
- Fold the tortilla and cook until golden brown, then flip to cook the other side.
- Keep cooked quesadilla warm while repeating with remaining tortillas.
- Cut into wedges and serve with extra BBQ sauce or ranch.
