Description

BBQ Meatball Rice Bowls offer irresistible flavor and simple prep. Made with beef meatballs, BBQ sauce, and fresh veggies, they’re perfect for a quick, satisfying meal.


Ingredients

  • 10-12 frozen beef meatballs (approx. 250 grams total, or homemade)
  • ¾ cup white rice (uncooked)
  • ½ cup BBQ sauce
  • 1 cup corn kernels (cooked or canned, rinsed and drained)
  • ½ cup pickled red onions
  • 1 ½ cups shredded iceberg lettuce
  • dairy free ranch dressing (for drizzling)


Instructions

  1. Preheat the oven to 180°C (350°F). Cook the rice according to packet instructions, ideally using a rice cooker.
  2. Bake the beef meatballs for about 20 minutes or as directed, until fully cooked. Toss the meatballs in a bowl with the BBQ sauce until evenly coated.
  3. Divide the cooked rice between serving bowls. Top with BBQ-coated meatballs, corn, pickled red onions, and shredded lettuce.
  4. Drizzle with dairy free ranch dressing and serve right away.

Notes

Feel free to use homemade beef meatballs for an extra touch!
Adjust the amount of BBQ sauce to suit your taste preferences.
You can substitute the ranch dressing with any dressing of your choice.
