- 10-12 frozen beef meatballs (approx. 250 grams total, or homemade)
- ¾ cup white rice (uncooked)
- ½ cup BBQ sauce
- 1 cup corn kernels (cooked or canned, rinsed and drained)
- ½ cup pickled red onions
- 1 ½ cups shredded iceberg lettuce
- dairy free ranch dressing (for drizzling)
Instructions
- Preheat the oven to 180°C (350°F). Cook the rice according to packet instructions, ideally using a rice cooker.
- Bake the beef meatballs for about 20 minutes or as directed, until fully cooked. Toss the meatballs in a bowl with the BBQ sauce until evenly coated.
- Divide the cooked rice between serving bowls. Top with BBQ-coated meatballs, corn, pickled red onions, and shredded lettuce.
- Drizzle with dairy free ranch dressing and serve right away.
