Description

Ingredients

  • 1 pound salmon fillet (skinless, cubed)
  • 2 teaspoons olive oil
  • 1 teaspoon lemon pepper seasoning
  • 1/4 teaspoon salt
  • 1 large lemon (sliced thinly)
  • 1 tablespoon fresh dill (chopped)
  • 1 tablespoon red onion (finely chopped)
  • 1/2 tablespoon fresh lemon juice
  • 1/2 tablespoon extra virgin olive oil
  • 1/2 tablespoon mayonnaise
  • Salt and ground black pepper (to taste)


Instructions

  • Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • Coat cubed salmon with olive oil, lemon pepper seasoning, and salt in a mixing bowl.
  • Thread two cubes of salmon and a folded lemon slice onto skewers, placing them on the prepared baking sheet.
  • Bake for about 6 minutes, flipping halfway through, until salmon is opaque and flakes easily.
  • Mix dill sauce by combining dill, red onion, lemon juice, olive oil, mayonnaise, salt, and pepper in a bowl until smooth.
  • Drizzle dill sauce over baked skewers before serving and garnish with extra dill and lemon slices.

Notes

You can substitute skinless salmon with trout or any firm fish if needed.
