Description

Ingredients

  • 1 ½ pounds chicken breasts cubed
  • 2 tablespoons olive oil divided
  • 1 red bell pepper sliced
  • 1 yellow bell pepper sliced
  • 1 red onion sliced
  • 3 cloves garlic minced
  • 2 tablespoons vegetable oil
  • tortillas flour or corn
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • ½ teaspoon smoked paprika
  • ½ teaspoon kosher salt
  • ¼ teaspoon ground black pepper


Instructions

  1. In a small bowl, combine chili powder, cumin, smoked paprika, kosher salt, and ground black pepper. Set aside.
  2. Cube the chicken into 1-inch pieces. In a bowl, mix with 1 tablespoon of olive oil and half of the fajita seasoning until evenly coated.
  3. In another bowl, toss the sliced vegetables with the remaining olive oil and fajita seasoning until thoroughly mixed.
  4. Preheat the Blackstone griddle for about 5 minutes on medium-high heat. Add vegetable oil and spread it out on the surface.
  5. Cook the chicken and vegetables on the griddle for 8-10 minutes, tossing occasionally until slightly charred and cooked through. Add garlic during the last few minutes of cooking.
  6. Warm tortillas on the griddle during the last minute of cooking.
  7. Serve the chicken, vegetables, and tortillas with your choice of toppings.

Notes

Adjust seasoning according to taste for a spicier kick.
Serve with toppings like salsa, guacamole, or sour cream for enhanced flavors.
