- 1 ½ pounds chicken breasts cubed
- 2 tablespoons olive oil divided
- 1 red bell pepper sliced
- 1 yellow bell pepper sliced
- 1 red onion sliced
- 3 cloves garlic minced
- 2 tablespoons vegetable oil
- tortillas flour or corn
- 1 teaspoon chili powder
- 1 teaspoon cumin
- ½ teaspoon smoked paprika
- ½ teaspoon kosher salt
- ¼ teaspoon ground black pepper
Instructions
- In a small bowl, combine chili powder, cumin, smoked paprika, kosher salt, and ground black pepper. Set aside.
- Cube the chicken into 1-inch pieces. In a bowl, mix with 1 tablespoon of olive oil and half of the fajita seasoning until evenly coated.
- In another bowl, toss the sliced vegetables with the remaining olive oil and fajita seasoning until thoroughly mixed.
- Preheat the Blackstone griddle for about 5 minutes on medium-high heat. Add vegetable oil and spread it out on the surface.
- Cook the chicken and vegetables on the griddle for 8-10 minutes, tossing occasionally until slightly charred and cooked through. Add garlic during the last few minutes of cooking.
- Warm tortillas on the griddle during the last minute of cooking.
- Serve the chicken, vegetables, and tortillas with your choice of toppings.
