Description

This Bottom Round Roast in Slow Cooker is sure to impress! With its tender texture and rich flavors, this dish combines simple prep with hearty ingredients, making it an ideal choice for a comforting dinner or family gathering.


Ingredients

  • 4 pound bottom round roast
  • 1 small onion, sliced
  • 2 cups beef broth
  • 2 tsp salt
  • 1 tsp pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp thyme
  • 2 cups drippings
  • 1 tbsp worcestershire sauce
  • 2 tsp onion powder
  • 3 tbsp cornstarch
  • 6 tbsp water to thicken
  • 1 pinch salt, to taste


Instructions

  1. Place the sliced onions at the bottom of a 6-8 quart slow cooker.
  2. In a small bowl, mix the salt, pepper, garlic powder, and thyme. Sprinkle this seasoning blend over all sides of the roast.
  3. Put the seasoned roast, fat side up, on top of the onions in the slow cooker.
  4. Pour the beef broth slowly around the roast.
  5. Cover the slow cooker and cook on high for 6 hours or on low for 10 hours.
  6. For the gravy, carefully take out 2 cups of beef drippings from the slow cooker and add them to a saucepan over medium-high heat.
  7. Stir in the worcestershire sauce and onion powder and bring to a boil.
  8. In a separate dish, whisk together the cornstarch and water until smooth.
  9. Slowly add the cornstarch mixture to the boiling drippings and stir until thickened.
  10. Remove from heat and serve the gravy over the sliced roast, topped with fresh chopped parsley if desired.

Notes

Adjust the salt according to personal taste preferences.
For a richer flavor, sear the roast in a pan before placing it in the slow cooker.
Store any leftovers in an airtight container in the refrigerator.
