Description

Ingredients

  • 1 pre-made 15-ounce pie crust
  • 3 large eggs
  • 1 cup light corn syrup
  • 1 cup light brown sugar, packed
  • 1 teaspoon vanilla extract
  • 1/4 cup melted butter
  • 3 tablespoons bourbon
  • 1/2 teaspoon salt
  • 1 1/2 cups coarsely chopped pecans, reserve 1/4 cup for decoration


Instructions

  • Preheat oven to 350°F (175°C) and prepare pie crust in a 9-inch dish, blind baking if homemade.
  • In a mixing bowl, whisk together eggs, corn syrup, brown sugar, vanilla, butter, salt, and bourbon until combined.
  • Fold in chopped pecans and pour mixture into crust, reserving some for topping if desired.
  • Bake for 50 minutes until filling is set but slightly jiggly in the center and top is golden-brown.
  • Cool pie for at least 2 hours before serving, optionally topping with whipped cream or ice cream.

Notes

Store pie at room temperature for up to 2 days or in an airtight container in the fridge for a week.
