- 3 large eggs
- 1 cup light corn syrup
- 1 cup light brown sugar, packed
- 1 teaspoon vanilla extract
- 1/4 cup melted butter
- 3 tablespoons bourbon
- 1/2 teaspoon salt
- 1 1/2 cups coarsely chopped pecans, reserve 1/4 cup for decoration
Instructions
- Preheat oven to 350°F (175°C) and prepare pie crust in a 9-inch dish, blind baking if homemade.
- In a mixing bowl, whisk together eggs, corn syrup, brown sugar, vanilla, butter, salt, and bourbon until combined.
- Fold in chopped pecans and pour mixture into crust, reserving some for topping if desired.
- Bake for 50 minutes until filling is set but slightly jiggly in the center and top is golden-brown.
- Cool pie for at least 2 hours before serving, optionally topping with whipped cream or ice cream.
