Description

This Cajun Chicken Pasta packs irresistible flavor and is easy to prepare. With creamy sauce, tender chicken, and a touch of Cajun spice, it’s a perfect quick dinner!


Ingredients

  • 2 boneless skinless chicken breasts
  • 2 tbsp olive oil
  • 1 tbsp cajun seasoning
  • 8 oz penne or similar pasta
  • 2 tbsp butter
  • 1 tbsp flour
  • 2 cloves garlic minced
  • 2 oz cream cheese the brick style, not the tub style
  • 2 cups half and half
  • 1/4 cup fresh grated parmesan cheese not the powder type!
  • Salt pepper and additional Cajun seasoning to taste


Instructions

  1. Combine the chicken, 1 tablespoon of olive oil, and Cajun seasoning in a gallon zipper style bag. Shake to coat evenly.
  2. Heat the remaining olive oil in a large pan over medium-high heat. Add chicken breasts, cover, and cook for seven minutes per side, checking for doneness.
  3. Cook pasta according to package directions until al dente.
  4. In a medium saucepan, melt butter over medium heat and whisk in flour until smooth. Add cream cheese and garlic, stirring until combined.
  5. Gradually add 1/4 of the half and half, whisking until smooth. Mix in parmesan and slowly whisk in the remaining half and half. Bring to a gentle boil to thicken.
  6. Pour the creamy sauce over drained pasta and mix well to combine.
  7. Serve immediately, topping with sliced chicken and garnishing with tomatoes and green onions as desired.

Notes

Adjust seasoning to taste for more flavor.
You can add vegetables like bell peppers or mushrooms for extra nutrition.
Leftovers can be stored in the fridge for up to 3 days.
