Description

Enjoy a comforting bowl of Cauliflower Mac And Cheese, featuring tender cauliflower in a creamy cheddar sauce. Perfect for a quick dinner or a cozy meal, this delightful dish is made with simple ingredients that deliver exceptional flavor without the guilt.

Ingredients

Scale
  • 2 heads (~1800 g total) cauliflower cut into 1-inch (2.5 cm) pieces
  • ¼ cup (57 g) butter
  • ¼ cup (30 g) all-purpose flour
  • 2 cups (480 g) whole milk warmed
  • 2½ cups (250 g) grated white cheddar cheese divided
  • ¼ cup (60 g) sour cream
  • ¼ tsp (1 g) garlic powder
  • ¼ tsp (0.5 g) onion powder
  • ½ tsp (3 g) table salt
  • ¼ tsp (0.5 g) black pepper

Instructions

  • Preheat the oven to 375°F (190°C).
  • Chop the cauliflower into 1-inch pieces and steam them until fork-tender, about 10 minutes. Drain and let them sit to release excess moisture.
  • In a large oven-safe skillet, melt the butter over medium heat. Whisk in the flour and cook for about 3 minutes to remove the raw flour taste.
  • Gradually add the warmed milk while whisking to form a smooth sauce. Cook until slightly thickened, enough to coat the back of a spoon.
  • Lower the heat, and mix in 2 cups of cheddar cheese until melted and smooth. Incorporate the sour cream, garlic powder, onion powder, salt, and pepper, mixing well.
  • Gently fold in the steamed cauliflower, ensuring each piece is coated in sauce. Top with the remaining cheddar cheese.
  • Bake in the oven for 25 to 30 minutes, or until the edges are bubbling and the cheese is lightly melted. Allow to cool for a few minutes before serving.

Notes

For added texture, consider topping with breadcrumbs before baking for a crunchy crust.
You can substitute other cheeses for a different flavor profile, such as gouda or mozzarella.
