  • 2 cups rotisserie or cooked chicken diced or shredded
  • ¼ cup butter melted
  • 3 cups low sodium chicken broth
  • 1 cup sour cream
  • 2 cups long grain rice
  • 1 teaspoon dried rosemary
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • ½ teaspoon dried oregano
  • ½ teaspoon dried thyme
  • ½ teaspoon dried basil
  • 2 cups mozzarella cheese
  • 2 tablespoons fresh parsley for garnish


Instructions

  • Preheat oven to 375°F and grease a 9×13 baking dish.
  • In a large bowl, whisk together butter, chicken broth, and sour cream. Add rice, chicken, rosemary, black pepper, paprika, oregano, thyme, basil, and 1 cup of mozzarella cheese. Mix until well combined.
  • Pour mixture into the prepared baking dish and cover with foil. Bake for 45 minutes.
  • Remove the foil and fluff the rice with a fork. Sprinkle the remaining cheese on top and bake for an additional 15 minutes until golden and tender.
  • Let rest for 10 minutes, then garnish with fresh parsley before serving.
