Description

  • 1/2 cup butter (melted and slightly cooled)
  • 3 eggs
  • 16 ounces sour cream (regular or light)
  • 2 (14.75 ounce) cans cream style corn
  • 16 ounce bag frozen sweet corn
  • 9 ounce box Jiffy cornbread mix
  • 8 ounces shredded sharp cheddar cheese (divided)


Instructions

  • Preheat oven to 375°F and prepare a 13”x9” baking dish with butter or nonstick spray.
  • In a large bowl, whisk together melted butter and eggs until blended, then add sour cream and whisk until smooth.
  • Fold in cream-style corn and frozen sweet corn until fully incorporated.
  • Add Jiffy cornbread mix and half of the cheddar cheese, gently folding until just moistened.
  • Pour mixture into prepared baking dish and spread evenly, then top with remaining cheese.
  • Bake for 1 hour and 15 minutes to 1 hour and 25 minutes, until golden brown and slightly jiggly in the center.

Notes

For lighter options, substitute light sour cream and vegetable oils for butter.
Let the casserole cool completely before storing for up to 5 days in the fridge, or freeze for 3 months for later enjoyment.
Avoid overmixing the cornbread mix to ensure a fluffy texture.
