Description

This Chicken and Broccoli Bake is a delightful combination of tender chicken, fresh broccoli, and cheesy goodness. It’s an easy dish to prepare, making it perfect for a quick weeknight dinner or a comforting meal any day of the week.


Ingredients

  • 3 cups diced or shredded cooked chicken
  • 2 cups chopped broccoli florets
  • 1 cup shredded sharp cheddar cheese
  • ¾ cup whole wheat pastry flour, or all-purpose flour
  • 1 ¼ teaspoon baking powder
  • 1 ½ cups milk
  • 1 cup small-curd cottage cheese
  • 3 eggs
  • ½ cup grated parmesan
  • ¾ teaspoon salt
  • freshly ground black pepper, to taste


Instructions

  • Preheat the oven to 350°F and place the oven rack in the center. Grease a 9- by 13-inch baking dish.
  • In a large bowl, combine the chicken, broccoli, and cheddar cheese. Spoon the mixture into the prepared baking dish.
  • In the same bowl, add flour and baking powder, whisking to combine. Next, add milk, cottage cheese, eggs, Parmesan, salt, and pepper. Stir until everything is smooth with no lumps.
  • Pour the mixture over the chicken and broccoli in the baking dish, pressing down on the broccoli to ensure it cooks evenly.
  • Bake for 45 to 55 minutes, or until a knife inserted in the center emerges clean. Allow to rest for 5 minutes before serving.

Notes

For extra flavor, consider adding garlic or onion powder to the chicken mixture.
You can substitute the sharp cheddar with your favorite cheese varieties.
This dish can be prepared in advance and baked just before serving.
