Description

Ingredients

  • 2 teaspoons garlic powder
  • 2 teaspoons smoked paprika
  • 2 teaspoons cumin
  • 2 teaspoons kosher salt

  • 2 pounds ground chicken
  • 2 tablespoons extra-virgin olive oil, for pan frying

  • tzatziki or basil aioli


Instructions

  1. In a small bowl, combine the onion powder, garlic powder, smoked paprika, cumin, kosher salt, and black pepper.
  2. Spread the ground chicken on a large baking sheet and sprinkle the seasoning mixture evenly over it.
  3. Gently fold the ground chicken to incorporate the seasonings without overmixing.
  4. Form the mixture into 6 equal patties, washing your hands as needed to shape them smoothly.
  5. Refrigerate the patties for 15 minutes.
  6. While the patties chill, prepare the toppings by mixing the tzatziki sauce ingredients in a small bowl and refrigerating until serving, along with preparing the other toppings.
  7. For stovetop cooking, heat a large stainless steel or cast-iron skillet over medium-high heat. Add olive oil and cook the burgers for 3 to 4 minutes on each side until lightly browned, ensuring the internal temperature reaches 165°F (74°C).
  8. For grilling, preheat the grill to medium-high, place a sheet of oiled aluminum foil on the grates, and arrange the patties on top. Cook for 5 to 6 minutes, flip, and cook for an additional 4 minutes, finishing directly on the grill grates for 2 to 4 minutes more until the internal temperature reaches 165°F (74°C).
  9. Serve the burgers on buns or in bowls with greens, sauce, and pickled onions. Leftovers can be stored in the refrigerator for up to 4 days.
