Description

This Chicken Cacciatore combines tender chicken thighs and vibrant vegetables in a rich tomato sauce, making it a quick, comforting meal that’s bursting with flavor. Perfect for a weeknight dinner or whenever you’re craving homemade goodness!


Ingredients

  • 4 chicken thighs bone-in and skin-on
  • 1 cup chicken broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (8 oz) tomato sauce
  • 1 bell pepper diced
  • 1 medium sweet onion diced
  • 1 tablespoon minced garlic
  • 1 tablespoon dried basil
  • 1 tablespoon Italian seasoning
  • 1 teaspoon oregano
  • 1 teaspoon thyme
  • 1 tablespoon capers
  • 1/4 teaspoon salt or to taste
  • 1/4 teaspoon ground black pepper or to taste
  • 1/4 teaspoon red pepper flakes
  • 2 tablespoons water
  • 2 tablespoons cornstarch


Instructions

  1. Add all the ingredients for Chicken Cacciatore, except the chicken, to the Instant Pot and stir to combine.
  2. Place the chicken on top of the mixture and secure the lid, ensuring the valve is sealed.
  3. Cook on high pressure for 10 minutes, or 15 minutes if using frozen chicken thighs. After cooking, allow a natural pressure release for 10 minutes, then carefully release any remaining pressure and open the lid.
  4. Preheat your oven to Broil.
  5. Using tongs, transfer the chicken to a baking pan coated with olive oil or lined with parchment paper.
  6. Brush the chicken with olive oil or melted butter, adding some of the cooking sauce if desired.
  7. Broil the chicken for 5-10 minutes, until golden brown. Keep a close eye to avoid burning.
  8. If the tomato sauce is too thin, cook it on Sauté for 20 minutes, stirring occasionally until it reduces.
  9. Alternatively, mix two tablespoons of water with two tablespoons of cornstarch until combined and add this slurry to the sauce in the Instant Pot on Sauté. Cook for 5-10 minutes until the sauce thickens.
  10. Serve the chicken over pasta and garnish with parsley or green onions if desired.

Notes

Feel free to customize the vegetables based on your preference.
For added depth of flavor, consider marinating the chicken in the sauce for a few hours prior to cooking.
