Description

Chicken Croquettes are delightfully crispy, filled with ground chicken and a creamy sauce, making them a quick and satisfying meal. Perfect for appetizers or a delicious family dinner!


Ingredients

  • 1 tbsp vegetable oil
  • 1 lb. ground chicken
  • ½ tsp salt
  • ¼ tsp black pepper (freshly cracked)
  • ½ tsp garlic powder
  • 2 tbsp butter
  • 3 tbsp all-purpose flour (30g)
  • 1 cup milk (8oz.)
  • ½ tsp salt
  • ¼ tsp black pepper (freshly cracked)
  • ½ tsp garlic powder
  • ¼ tsp onion powder
  • ¼ tsp dried parsley
  • 2 cups vegetable oil (16oz.)
  • ¼ cup all-purpose flour (40g)
  • 1 egg
  • 2 tbsp water
  • 1 cup panko breadcrumbs (80g)


Instructions

  1. Gather and prepare all ingredients.
  2. Heat vegetable oil in a medium skillet over medium heat. Add ground chicken, ½ tsp salt, ¼ tsp pepper, and ½ tsp garlic powder once hot.
  3. Cook chicken for about 8 minutes until fully cooked and no longer pink. Remove chicken with a slotted spoon to a bowl and set aside.
  4. Wipe out the skillet. Melt butter in the skillet over medium heat. Add 3 tablespoons flour and cook for 1 minute.
  5. Slowly whisk in milk. Continue whisking for about 2 minutes until sauce is thick and smooth.
  6. Turn off heat and whisk in the remaining ½ tsp salt, ¼ tsp pepper, ½ tsp garlic powder, onion powder, and dried parsley.
  7. Pour sauce over cooked chicken and fold to combine. Refrigerate for at least 30 minutes to cool.
  8. Once cool, shape croquettes into 14 ovals using 1/8 cup. Place on a parchment-lined plate and freeze for at least 2 hours.
  9. Preheat the vegetable oil in a pot over medium-low heat. Prepare four shallow dishes for breading: flour, egg with water, panko, and an empty plate.
  10. Roll frozen croquettes in flour, then coat in egg wash, and finally in panko.
  11. Heat oil to 350°F-365°F. Carefully place croquettes into the oil without overcrowding. Fry undisturbed for about 2 minutes until golden brown, then flip and fry for another 2 minutes.
  12. Place cooked croquettes on paper towels to drain. Ensure the oil temperature stays at 350°F and continue frying until all are done.

Notes

Chilling the mixture is important for easier shaping of croquettes.
For extra crunch, double dip the croquettes in flour and panko before frying.
Keep oil temperature consistent to achieve even cooking.
