Description

Chicken Fajita Casserole is a vibrant and hearty dish featuring juicy chicken, colorful bell peppers, and melted cheese. This easy recipe is perfect for weeknight dinners and gatherings, offering comforting flavors everyone will enjoy.


Ingredients

  • 1 ½ pounds boneless skinless chicken breast
  • 2 ½ tablespoons olive oil or avocado oil
  • 1 package fajita seasoning or about 2 tablespoons of homemade
  • 1 large onion, thinly sliced
  • 2 bell peppers, seeded and sliced (colors of choice)
  • 2 cloves garlic, minced
  • ¾ cup sour cream
  • ½ cup salsa
  • 1 ½ cups shredded cheese (cheddar or Mexican blend)
  • 1 cup canned black beans, drained and rinsed
  • Fresh cilantro, jalapeño slices, avocado, lime, crushed tortilla chips, etc.


Instructions

  • Preheat the oven to 375°F (190°C).
  • In a large skillet, heat 1½ tablespoons of oil over medium heat and sauté the chicken strips with fajita seasoning until golden brown.
  • Add the sliced onion and bell peppers, cook until softened, then add minced garlic.
  • In a bowl, combine sour cream, salsa, and half of the cheese, then mix in the chicken, veggies, and black beans.
  • Pour the filling into a greased 9×13 inch baking dish, top with the remaining cheese, and bake for 20-25 minutes until bubbly.
  • Let rest for 5 minutes before serving with garnishes.

Notes

For a healthy twist, use Greek yogurt instead of sour cream.
To store leftovers, let cool completely and refrigerate in an airtight container for up to 4 days.
Freeze leftovers for up to 3 months wrapped tightly.
