Description

This Chicken Gnocchi Soup boasts a rich, creamy broth full of tender chicken and flavorful gnocchi. Ideal for cozy nights, it combines simplicity with incredible taste to create a satisfying meal in just 45 minutes.


Ingredients

  • Olive Oil
  • Boneless, Skinless Chicken Breasts
  • Black Pepper
  • Paprika
  • Italian Seasoning
  • Butter
  • Yellow Onion
  • Carrots
  • Celery
  • Garlic
  • Sun-Dried Tomatoes
  • Tomato Paste
  • Dried Thyme
  • Low-Sodium Chicken Broth
  • Heavy Cream
  • Parmesan Cheese
  • Potato Gnocchi
  • Baby Spinach


Instructions

  • Prepare the Chicken by cutting it into bite-sized pieces and seasoning.
  • Sear the Chicken in olive oil until golden brown, then set aside.
  • Sauté the Vegetables in butter until softened, then add garlic, tomatoes, paste, and thyme.
  • Add Chicken Broth, scrape the bottom of the pot, and return the chicken to simmer for 10-12 minutes.
  • Incorporate Cream and Cheese until well mixed and melted.
  • Add Gnocchi and Spinach, cooking until gnocchi float to the surface, about 3-5 minutes.
  • Serve hot with warm bread or croutons.

Notes

For a quicker option, use rotisserie chicken.
Swap in gluten-free gnocchi for a gluten-free version.
Add lemon juice just before serving for extra brightness.
