- 1 1/2 teaspoons kosher salt
- 1/4 teaspoon ground black pepper
- 2 tablespoons fresh lemon juice
- 2 tablespoons italian seasoning
- 6 garlic cloves minced
- 1 1/2 pounds chicken of choice boneless skinless chicken breasts, boneless skinless chicken thighs, bone-in chicken thighs or drumsticks, and chicken wings all work well.
Instructions
- Combine the olive oil, kosher salt, black pepper, lemon juice, italian seasoning, and minced garlic in a bowl to create the marinade.
- Transfer the marinade into a zip-top bag and add the chicken pieces. Seal the bag while removing excess air, and ensure the chicken is well coated.
- Allow the chicken to marinate for at least 30 minutes, or up to 12 hours for enhanced flavor. Do not marinate longer than 24 hours to avoid altering the chicken's texture.
- Cook the chicken as preferred, either by grilling or baking.
Notes
For extra flavor, consider adding herbs like rosemary or thyme to the marinade.
The longer you marinate, the more flavorful the chicken will be, but 30 minutes is adequate for a quick meal.
Ensure chicken is cooked through by checking it reaches an internal temperature of 165°F.
