Description

Chicken Scampi brings together tender chicken pieces with a zesty garlic and lemon sauce. Served over savory garlic parmesan rice, it makes for an easy and delicious meal perfect for family dinners.


Ingredients

  • 1 lb boneless, skinless chicken thighs or breasts, cut into bite-sized pieces
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/4 cup fresh lemon juice (about 1-2 lemons)
  • 1/4 cup dry white wine or chicken broth
  • 2 tablespoons unsalted butter
  • salt and freshly ground black pepper, to taste
  • 2 tablespoons fresh parsley, chopped
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 2 tablespoons butter
  • 3 cloves garlic, minced
  • 1/2 cup freshly grated parmesan cheese
  • salt and pepper, to taste
  • 2 tablespoons fresh parsley, chopped (for garnish)
  • lemon wedges
  • additional fresh parsley


Instructions

  • In a medium saucepan, melt the butter over medium heat. Add minced garlic and cook until fragrant, about 1 minute.
  • Stir in the rice, coating it with the garlic butter. Add chicken broth, bring to a boil, then reduce heat to low. Cover and simmer for 15-20 minutes until the rice is tender. Stir in Parmesan cheese, season with salt and pepper, and set aside.
  • In a large skillet, heat olive oil over medium-high heat. Season the chicken with salt and pepper and cook until golden and cooked through, around 5-7 minutes. Remove the chicken and set aside.
  • In the same skillet, sauté garlic for 30 seconds, then add white wine (or chicken broth) and lemon juice, scraping the pan to deglaze. Stir in butter and cook for 2 minutes.
  • Return the cooked chicken to the skillet and toss to coat in the sauce.

Notes

For extra flavor, use homemade chicken broth instead of store-bought.
Feel free to add vegetables such as spinach or asparagus for added nutrition.
Garnish with extra lemon wedges and parsley for a fresh look.
