This Chilled Pineapple Cucumber Salad combines the sweetness of pineapple with the crunch of cucumber. It’s easy to make, flavorful, and a great choice for quick dinners or healthy meals.

- zest of one lime
- 2 tbsps (30 ml) fresh lime juice
- 1 tbsp (21 g) honey
- ½ tsp (3 g) kosher salt
- ¼ tsp (0.5 g) black pepper
- 2 cups (330 g) fresh pineapple cut into bite-size pieces
- 1½ cups (210 g) english cucumber chopped
- ½ cup (75 g) red onion thinly sliced
- 1 serrano pepper finely diced, remove seeds and ribs for less spice if you want
- ¼ cup (10 g) fresh cilantro chopped
Instructions
- Whisk together lime zest, lime juice, honey, kosher salt, and black pepper in a small bowl until fully blended and honey dissolves.
- In a large mixing bowl, combine pineapple, cucumber, red onion, serrano pepper, and cilantro, then gently toss to mix.
- Pour the dressing over the salad and toss gently until everything is evenly coated.
- Taste and adjust seasoning if needed, adding more salt or lime if desired.
- Refrigerate for 15 to 30 minutes before serving to keep the salad cold and refreshing.
Notes
For a milder salad, remove the seeds and ribs from the serrano pepper before dicing.
Letting the salad refrigerate enhances the flavors and keeps it crisp.
