Description

This Chilled Pineapple Cucumber Salad combines the sweetness of pineapple with the crunch of cucumber. It’s easy to make, flavorful, and a great choice for quick dinners or healthy meals.


Ingredients

Scale
  • zest of one lime
  • 2 tbsps (30 ml) fresh lime juice
  • 1 tbsp (21 g) honey
  • ½ tsp (3 g) kosher salt
  • ¼ tsp (0.5 g) black pepper
  • 2 cups (330 g) fresh pineapple cut into bite-size pieces
  • 1½ cups (210 g) english cucumber chopped
  • ½ cup (75 g) red onion thinly sliced
  • 1 serrano pepper finely diced, remove seeds and ribs for less spice if you want
  • ¼ cup (10 g) fresh cilantro chopped


Instructions

  • Whisk together lime zest, lime juice, honey, kosher salt, and black pepper in a small bowl until fully blended and honey dissolves.
  • In a large mixing bowl, combine pineapple, cucumber, red onion, serrano pepper, and cilantro, then gently toss to mix.
  • Pour the dressing over the salad and toss gently until everything is evenly coated.
  • Taste and adjust seasoning if needed, adding more salt or lime if desired.
  • Refrigerate for 15 to 30 minutes before serving to keep the salad cold and refreshing.

Notes

For a milder salad, remove the seeds and ribs from the serrano pepper before dicing.
Letting the salad refrigerate enhances the flavors and keeps it crisp.
