- 1 1/2 lbs flank skirt, or sirloin steak
- ½ cup fresh parsley finely chopped
- 3 garlic cloves minced
- ¼ cup olive oil
- 2 tbsp fresh lemon juice
- 1 tsp salt
- ½ tsp black pepper
Instructions
- In a bowl, combine the chopped parsley, minced garlic, olive oil, lemon juice, salt, and black pepper.
- Pour about two-thirds of the chimichurri sauce over the steak, ensuring it's evenly coated on all sides. Cover the steak and marinate in the refrigerator for at least 30 minutes, or up to 8 hours.
- Preheat a grill or cast-iron skillet over high heat. Cook the steak for 3–5 minutes on each side, adjusting the time for your preferred level of doneness.
- Once cooked, transfer the steak to a cutting board and let it rest for 5–10 minutes. Slice the steak thinly against the grain.
- Serve the sliced steak with the remaining chimichurri sauce drizzled on top. Enjoy your meal!
Notes
For a spicier kick, consider adding red pepper flakes to the chimichurri.
Allowing the steak to marinate longer will enhance the flavor.
