- 2 scallions (chopped)
- 3 chipotle peppers (in adobo, seeded and chopped)
- 1 tablespoon chipotle adobo sauce
- 2 tablespoons mayonnaise
- ¼ cup strawberry jam (or leftover cranberry sauce)
- 2 slices American cheese
- 4 slices sandwich bread
- Butter (for griddle)
Instructions
- Mix the chopped turkey, diced tomato, scallions, chipotle peppers, and adobo sauce in a bowl; season to taste.
- Preheat a griddle over low heat. Spread mayonnaise on one slice of bread and jam on another.
- Assemble the sandwiches with the turkey mixture and cheese between the bread slices.
- Grill the sandwiches in melted butter for 4-5 minutes on each side until golden brown.
- Slice and serve hot, optionally with a side salad.
Notes
Use rotisserie chicken as an alternative to turkey.
