Description

These Chipotle Turkey Sandwiches are a delightful blend of flavors, combining turkey, chipotle spice, and sweet jam, making them perfect for a quick and satisfying meal.


Ingredients

  • 2 cups leftover turkey (chopped)
  • 1 small tomato (seeded and diced)
  • 2 scallions (chopped)
  • 3 chipotle peppers (in adobo, seeded and chopped)
  • 1 tablespoon chipotle adobo sauce
  • 2 tablespoons mayonnaise
  • ¼ cup strawberry jam (or leftover cranberry sauce)
  • 2 slices American cheese
  • 4 slices sandwich bread
  • Butter (for griddle)


Instructions

  • Mix the chopped turkey, diced tomato, scallions, chipotle peppers, and adobo sauce in a bowl; season to taste.
  • Preheat a griddle over low heat. Spread mayonnaise on one slice of bread and jam on another.
  • Assemble the sandwiches with the turkey mixture and cheese between the bread slices.
  • Grill the sandwiches in melted butter for 4-5 minutes on each side until golden brown.
  • Slice and serve hot, optionally with a side salad.

Notes

Use rotisserie chicken as an alternative to turkey.
For a lighter option, substitute mayonnaise with Greek yogurt.
