These chocolate covered almond stuffed dates feature irresistible flavor and easy prep. With almond butter and chocolate, they make a delightful snack or dessert.

- 16 Deglet Noor dates
- 4 tablespoon almond butter
- 150 g milk chocolate chips (5 oz, ¾ cup)
- 2 tablespoon chopped pistachios
- 1 tablespoon coconut butter
Instructions
- Melt chocolate chips and coconut butter together in a chocolate melting pot or a bowl over simmering water until smooth.
- Pit the dates and fill each with less than a teaspoon of almond butter.
- Dip each stuffed date into the melted chocolate using a fork, allowing excess chocolate to drip off.
- Place the chocolate-covered dates on a tray lined with non-stick paper and sprinkle with chopped pistachios.
- Refrigerate until the chocolate is set, approximately 20 minutes.
Notes
For a healthier version, use dark chocolate instead of milk chocolate.
The stuffed dates can be stored in an airtight container for several days in the refrigerator.
