- 1 teaspoon vanilla extract
- Streusel topping: ½ cup all-purpose flour, ⅓ cup brown sugar, 2 teaspoons ground cinnamon, 3 tablespoons melted unsalted butter
Instructions
- Preheat oven to 350°F. Line a 9×5-inch loaf pan with parchment paper and spray with nonstick spray.
- Whisk together flour and baking powder in a small bowl; set aside.
- Mix granulated sugar and cinnamon in another bowl for cinnamon sugar.
- In a large mixing bowl, whisk eggs and brown sugar until smooth, then add milk, oil, sour cream, and vanilla extract, mixing until combined.
- Fold flour mixture into wet ingredients until just combined; do not overmix.
- Layer one-third of batter in the loaf pan, sprinkle with one-third of the cinnamon sugar, and repeat until all batter and sugar are used.
- For streusel, mix flour, brown sugar, cinnamon, and melted butter until clumpy; sprinkle over batter.
- Bake for 60-65 minutes until a toothpick comes out clean. Allow to cool for 10 minutes before transferring to a wire rack.
