Description

This Classic Reuben Sandwich is a delicious combination of corned beef, Swiss cheese, sauerkraut, and Thousand Island dressing, all grilled to perfection. Perfect for a quick dinner or a comforting lunch, this recipe showcases simple prep and mouthwatering flavors that any food lover will enjoy.


Ingredients

  • 4 slices marble rye or plain rye
  • 2-4 tablespoons butter softened
  • 1/4 cup thousand island dressing plus more to taste
  • 4 slices swiss cheese
  • 1/2 pound sliced corned beef deli-sliced thin
  • 1/4 cup sauerkraut drained and squeezed dry


Instructions

  1. Prepare a tray or cutting board with parchment paper for easy assembly and cleanup.
  2. Spread butter on one side of each slice of bread and place them butter-side down on the tray. Spread 1 tablespoon of Thousand Island dressing on each slice, then top with a slice of Swiss cheese.
  3. Distribute the corned beef evenly on two of the slices, gently folding or piling for texture. Top with 2 tablespoons of drained sauerkraut.
  4. Preheat a large cast iron skillet, nonstick pan, or griddle over medium-low heat for 3 minutes.
  5. Transfer the sandwiches to the pan using a spatula and press lightly. Cook until the first side is golden brown, about 3-4 minutes. Adjust the heat if necessary.
  6. Flip the sandwiches and cook for another 3-4 minutes until golden brown on the second side and the cheese is melted.
  7. Slice in half and serve immediately.

Notes

Adjust the amount of Thousand Island dressing to your taste.
Make sure the sauerkraut is well-drained to avoid sogginess.
