- 4 cups powdered sugar (plus more for dusting)
- 1 cup sweetened shredded coconut
- 60 whole almonds
- 23 ounces milk chocolate chips (divided)
- 2 tablespoons shortening (divided)
Instructions
- Cream together softened cream cheese, salted butter, and coconut extract until smooth.
- Gradually add powdered sugar until fully blended.
- Fold in sweetened shredded coconut until evenly mixed.
- Chill the mixture in the refrigerator for about 30 minutes.
- Shape the mixture into small ovals on a lined baking sheet and top with almonds.
- Freeze for at least an hour to firm up.
- Melt milk chocolate with shortening until smooth in intervals in the microwave.
- Dip each bar in the melted chocolate and let them set in the refrigerator for 15 minutes.
