Description

These Copycat Almond Joy Bars combine a creamy coconut filling, crunchy almonds, and smooth chocolate coating, making them irresistible and easy to prepare. Perfect for any occasion!


Ingredients

  • 8 ounces cream cheese (softened)
  • 2 tablespoons salted butter (softened)
  • 1 teaspoon coconut extract
  • 4 cups powdered sugar (plus more for dusting)
  • 1 cup sweetened shredded coconut
  • 60 whole almonds
  • 23 ounces milk chocolate chips (divided)
  • 2 tablespoons shortening (divided)


Instructions

  • Cream together softened cream cheese, salted butter, and coconut extract until smooth.
  • Gradually add powdered sugar until fully blended.
  • Fold in sweetened shredded coconut until evenly mixed.
  • Chill the mixture in the refrigerator for about 30 minutes.
  • Shape the mixture into small ovals on a lined baking sheet and top with almonds.
  • Freeze for at least an hour to firm up.
  • Melt milk chocolate with shortening until smooth in intervals in the microwave.
  • Dip each bar in the melted chocolate and let them set in the refrigerator for 15 minutes.

Notes

For a richer flavor, use full-fat cream cheese.
