These Copycat Salted Nut Roll Bars combine gooey marshmallows, creamy peanut butter, and crunchy peanuts for an irresistible treat. Easy to make and perfect for sharing!

- 1 ½ cups all-purpose flour
- 1 cup light brown sugar
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- 1 large egg
- ½ cup unsalted butter (melted)
- 1 teaspoon vanilla extract
- 2 cups miniature marshmallows
- 1 cup peanut butter chips
- ½ cup light corn syrup
- 1 cup salted peanuts
- 3 cups Rice Krispies cereal
- Flaky sea salt (optional)
Instructions
- Preheat your oven to 350°F (175°C)
- Line a 9×13 inch baking dish with parchment paper.
- In a bowl, mix flour, brown sugar, baking powder, and baking soda.
- In another bowl, combine melted butter, egg, and vanilla extract.
- Add dry ingredients to wet ingredients, mixing gently.
- Fold in marshmallows and peanut butter chips.
- Spread mixture into the baking dish and bake for 20-30 minutes.
- Mix salted peanuts and Rice Krispies together.
- Once baked, sprinkle peanuts and Rice Krispies on top immediately.
- Allow bars to cool for 10-15 minutes, then lift out and let cool completely before slicing.
Notes
Bars can be stored in an airtight container for up to a week.
For longer storage, freeze in a zip-top bag for up to three months.
These bars can be made a day ahead for even better flavor.
