  • 1 cup cottage cheese 4% small curd
  • 1 large egg
  • 1 ½ cups all-purpose flour
  • 2 ¼ teaspoons baking powder
  • ½ teaspoon kosher salt
  • 1 egg white
  • 1 teaspoon water
  • 1 tablespoon everything bagel seasoning


Instructions

  1. Preheat the oven to 375˚F.
  2. Process the cottage cheese in a mini food processor until smooth, then let it rest for 10 minutes.
  3. Add the large egg to the cottage cheese and blend until light and fluffy.
  4. In a bowl, combine the flour, baking powder, and salt.
  5. Mix the blended cottage cheese with the dry ingredients until a rough dough forms.
  6. Transfer the dough to a floured surface, shape it into a ball, and divide into 6 pieces.
  7. Roll each piece into a long rope and form into a ring, pinching the ends together.
  8. Place the formed bagels on a parchment-lined baking sheet.
  9. Beat the egg white with water, brush over the bagels, and sprinkle with everything bagel seasoning.
  10. Bake for 18-22 minutes until the bagels are golden brown.
