  • 1 cup cottage cheese 4% small curd
  • 1 ½ cups all-purpose flour
  • 2 ¼ teaspoons baking powder
  • ½ teaspoon kosher salt
  • 3 tablespoons grated parmesan and romano blend
  • ¾ teaspoon garlic powder
  • ½ teaspoon kosher salt
  • ½ teaspoon dried oregano
  • ½ teaspoon dried basil
  • 7 tablespoons melted butter
  • 2 tablespoons vegetable oil
  • 1 teaspoon garlic powder


Instructions

  1. Preheat the oven to 450˚F. Process the cottage cheese in a food processor until smooth, then let it rest for 10 minutes.
  2. While the cottage cheese is resting, mix together the grated Parmesan and Romano blend, ¾ teaspoon of garlic powder, kosher salt, dried oregano, and dried basil to create the breadstick seasoning.
  3. In a bowl, combine the flour, baking powder, and ½ teaspoon of salt. Add the blended cottage cheese and mix until a dough forms.
  4. Transfer the dough to a floured surface, shape it into a circle, and let it rest for 15 minutes.
  5. Prepare the breadstick butter by mixing melted butter, vegetable oil, and 1 teaspoon of garlic powder. Spread 4 tablespoons of this mixture in a metal 9×13" pan.
  6. Flatten the dough and roll it out into a rectangle. Place it in the pan, spreading it to fill the space. Brush the top with 1 tablespoon of the breadstick butter.
  7. Bake in the preheated oven for 10-14 minutes. Once done, remove from the oven, brush with the remaining breadstick butter, sprinkle generously with the seasoning, and cut into sticks.

Notes

Feel free to experiment with different herbs or cheese blends to customize the flavor.
