Description
Cottage Fries are a delicious and simple side dish made with russet potatoes, tossed in olive oil and spices, then baked until crispy. They make for a great quick dinner or party snack!

- 6-7 small russet potatoes
- 2½ tbsp olive oil
- 1 tsp salt
- ½ tsp garlic powder
- ½ tsp onion powder
- ½ tsp paprika
- ¼ tsp pepper
Instructions
- Slice the potatoes into ¼-inch thick rounds.
- Soak the rounds in a bowl of water for 20-30 minutes. Then, drain the water and dry the potatoes off with paper towels.
- Preheat the oven to 425°F.
- Toss the potatoes in the olive oil and seasonings.
- Spread the pieces out in an even layer on a large baking sheet lined with parchment paper. Do this in batches if needed.
- Bake for 15 minutes. Flip the fries. Then, bake for another 15-20 minutes until the fries are golden brown and crispy.
Notes
For extra crispiness, make sure the potato slices are not overlapping on the baking sheet.
Feel free to add your favorite seasonings or herbs for a personal twist.
