- 1/2 cup butter softened
- 2 cloves garlic minced
- 1-2 tablespoons lemon juice + zest
- 1 teaspoon dijon mustard
- 1 teaspoon paprika
- 1 teaspoon red pepper flakes
- 1/2 tablespoon chives chopped
- 1 teaspoon each salt and pepper divided
- 2 tablespoons cornstarch
- 1 tablespoon cooking oil spray
- 2 pounds chicken wings
Instructions
- In a bowl, combine the softened butter, minced garlic, lemon juice, half of the zest, dijon mustard, paprika, red pepper flakes, chives, and half of the salt and pepper.
- In a large ziptop bag, mix cornstarch with the remaining salt and pepper, then add the chicken wings and toss until well coated.
- Arrange the wings on a parchment-lined baking sheet and spray with cooking oil. Bake in an oven preheated to 400°F for 20 minutes. Remove them, baste with the cowboy butter mixture, flip the wings, then baste the other side. Bake for an additional 20 minutes.
- For air frying, place the wings in the basket, spray with cooking oil, and air fry at 400°F for 20 minutes, shaking halfway through. Transfer half of the cowboy butter to a large bowl. Toss the cooked wings in the bowl until fully coated, then return to the air fryer for another 15 minutes until crispy.
- Once fully cooked, toss or baste the wings with the remaining cowboy butter sauce and serve hot.
Notes
Adjust the spice level by adding more or less red pepper flakes to suit your taste.
Make sure the wings are well-coated in cornstarch to achieve extra crispiness when baking or air frying.
You can serve these wings with your favorite dipping sauce for an added flavor boost.
