- 1 cup (200g) granulated sugar
- 1 tablespoon fresh orange zest
- 6 tablespoons (85g) unsalted butter, softened
- 2 large eggs
- ¼ cup (60mL) whole milk
- 2 tablespoons (30mL) fresh orange juice
- 1 teaspoon vanilla extract
- 1 ½ cups (170g) fresh cranberries, chopped
- ¾ cup (90g) powdered sugar
- 1½ tablespoons fresh orange juice (for glaze)
- ½ teaspoon fresh orange zest (for glaze)
Instructions
- Preheat the oven to 350°F (175°C) and prepare a 9×5-inch loaf pan.
- Whisk together flour, baking powder, and salt in a medium bowl; set aside.
- Rub orange zest into granulated sugar in a large bowl, then mix in softened butter, eggs, milk, orange juice, and vanilla until combined.
- Gradually fold dry ingredients into the wet mixture, then gently fold in chopped cranberries.
- Pour batter into prepared pan and press a few reserved cranberries on top. Bake for 55-60 minutes.
- Cool in pan for 5-10 minutes, then glaze and serve.
Notes
For a gluten-free version, substitute all-purpose flour with a gluten-free blend.
Adjust the sugar levels based on your sweetness preference, especially if using sweeter dried cranberries.
