This Cranberry Orange French Toast Casserole brings together fresh cranberries and zesty orange for an exquisite breakfast. Easy to prepare and perfect for gatherings, it’s sure to impress!

- 2 tablespoons granulated sugar
- zest of 1 large orange
- 1 cup fresh cranberries, coarsely chopped
- 1 loaf day-old french bread*, or challah, brioche or ciabatta, cut into 1-inch cubes (about 10 cups of bread cubes)
- 6 large eggs
- 2 cups whole milk
- ½ cup pure maple syrup
- 1 tablespoon vanilla extract
- 1 teaspoon ground cinnamon
- ⅓ cup all-purpose flour
- 3 tablespoons packed light brown sugar
- ½ teaspoon ground cinnamon
- ¼ cup cold unsalted butter, cut into cubes
Instructions
- In a medium bowl, mix granulated sugar and orange zest together until fragrant, then add cranberries and stir. Set apart.
- Spray a 9×13 baking dish with cooking spray and arrange bread cubes in an even layer.
- In a large bowl, whisk together eggs, milk, maple syrup, vanilla, and 1 teaspoon of cinnamon until well combined. Pour evenly over the bread.
- Sprinkle the cranberry-orange mixture over the casserole.
- For the streusel, mix flour, brown sugar, and ½ teaspoon of cinnamon in a bowl. Incorporate butter until the mixture resembles small peas. Sprinkle over the casserole.
- Cover with plastic wrap and refrigerate overnight.
- Preheat your oven to 350°F. Remove plastic wrap, cover with foil, and bake for 30 minutes. Remove foil and bake for another 20-30 minutes until golden and firm. Serve and enjoy!
Notes
Use day-old bread for the best texture.
Feel free to add chopped pecans or walnuts to the streusel for extra crunch.
You can make it healthier by using whole grain bread.
