- Remove the cream cheese from its packaging and place it on a microwave-safe plate. Microwave for 15 seconds. Flip the cream cheese and microwave for another 10 to 15 seconds until softened but not melted.
- In a large bowl, add the softened cream cheese. Beat with a hand mixer until smooth and lump-free, about 1 minute. Use a spoon (run under hot water and dried) to scoop the marshmallow creme and add it to the bowl along with 2 tablespoons of fresh lime juice and coconut extract if using. Beat until the mixture is smooth and creamy.
- Cover the bowl tightly and refrigerate for about 1 hour or until fully chilled. Serve with your favorite fruit or dippers, ensuring the fruit is completely dry before serving to prevent the dip from sliding off.
