- Cornstarch

Instructions
- Heat olive oil in a large pot over medium heat.
- Sauté finely diced onion until soft, about 3-4 minutes.
- Add minced garlic and sauté until fragrant, about 1 minute.
- Stir in chili powder, ground cumin, oregano, and paprika; cook for 1 minute longer.
- Add chipotle sauce and chicken broth, bringing to a simmer.
- Stir in rinsed beans and shredded chicken; simmer for an additional 10 minutes.
- Dissolve cornstarch in cold water; stir into chili and cook until thickened, about 5 minutes.
- Remove from heat; stir in sour cream and cheese until melted.
