Description

Ingredients

  • Extra virgin olive oil
  • Yellow onion
  • Garlic
  • Chili powder
  • Ground cumin
  • Dried oregano
  • Paprika
  • Chipotle peppers in adobo sauce
  • Chicken broth
  • Great northern beans
  • Rotisserie chicken
  • Cornstarch
  • Water
  • Sour cream
  • Monterey jack cheese
  • Jalapeño pepper
  • Lime wedges
  • Fresh cilantro


Instructions

  • Heat olive oil in a large pot over medium heat.
  • Sauté finely diced onion until soft, about 3-4 minutes.
  • Add minced garlic and sauté until fragrant, about 1 minute.
  • Stir in chili powder, ground cumin, oregano, and paprika; cook for 1 minute longer.
  • Add chipotle sauce and chicken broth, bringing to a simmer.
  • Stir in rinsed beans and shredded chicken; simmer for an additional 10 minutes.
  • Dissolve cornstarch in cold water; stir into chili and cook until thickened, about 5 minutes.
  • Remove from heat; stir in sour cream and cheese until melted.

Notes

Ensure to sauté onions until translucent for depth of flavor.
Use room-temperature sour cream to avoid curdling when mixed.
