Description

This creamy cucumber salad is a delightful blend of fresh ingredients, offering a refreshing taste that’s perfect for a quick meal or party side dish. With cool cucumbers, zesty onion, and a rich dressing, it’s a great addition to your table.


Ingredients

  • 2 english cucumbers sliced into rounds
  • 1 small red onion thinly sliced
  • 2 cloves garlic minced
  • 1/2 cup sour cream
  • 1/2 cup plain greek yogurt
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon fresh dill chopped
  • 1/4 cup green onions
  • 1/2 teaspoon sea salt or to taste
  • 1/8 teaspoon black pepper or to taste
  • green onion and fresh dill for garnish


Instructions

  1. In a small bowl, mix sour cream, Greek yogurt, lemon juice, minced garlic, and dill. Season with salt and pepper, then set aside.
  2. Slice the cucumbers into thin rounds and place them in a large mixing bowl.
  3. Add the thinly sliced red onion to the bowl.
  4. Just before serving, pour the dressing over the salad and toss to coat the cucumbers evenly.
  5. If not serving immediately, the salad can remain at room temperature for about 2-3 hours before needing refrigeration.
  6. Garnish with chopped green onions and dill before serving. For the best flavor, refrigerate for 30 minutes to an hour before serving.

Notes

For extra flavor, try adding more herbs or spices to the dressing.
This salad can be made ahead of time; just add the dressing right before serving.
