Description

Crispy Chicken Milanese is a delightful dish featuring thinly sliced chicken cutlets, perfectly breaded and fried to golden perfection. This easy recipe combines simple ingredients into a satisfying meal that’s perfect for a quick dinner or a comforting meal with friends and family.


Ingredients

  • 2 boneless, skinless chicken breasts, sliced horizontally into 4 thin cutlets
  • 1 teaspoon fine sea salt
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon freshly-ground black pepper
  • 1/2 teaspoon lemon zest
  • 1/2 teaspoon smoked paprika
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1 teaspoon dijon mustard
  • 1 cup panko breadcrumbs
  • 2/3 cup finely grated parmesan
  • 1/23/4 cup neutral oil (grapeseed, avocado, or vegetable), for shallow frying
  • Flaky sea salt and lemon wedges, for serving


Instructions

  1. Pat the chicken cutlets dry with paper towels and season both sides with the salt, garlic powder, onion powder, smoked paprika, black pepper, and lemon zest.
  2. Set up a breading station: Place flour in one shallow bowl, whisk eggs and Dijon mustard in another, and combine panko with Parmesan in a third.
  3. Dredge each chicken cutlet in flour, dip into the egg mixture, then coat in the panko-Parmesan mixture. Place each breaded cutlet on a wire rack set over a baking sheet and let rest for 10-15 minutes.
  4. In a large skillet, heat oil over medium heat until shimmering. The oil should reach about 350°F.
  5. Fry the chicken cutlets in batches for 3-4 minutes per side until they are golden brown and cooked through. Transfer cooked cutlets back to the wire rack to drain.
  6. Finish the dish with a sprinkle of flaky sea salt and serve immediately with lemon wedges.

Notes

Resting the breaded cutlets helps the coating adhere better for a crispier finish.
Prevent overcrowding the pan while frying to ensure even cooking.
Adjust the oil temperature as needed to maintain a consistent fry.
