  • 4 boneless, skinless chicken breasts (about 2 pounds)
  • salt and pepper to taste
  • 1/2 cup mayonnaise (full-fat recommended)
  • 1/4 cup grated parmesan cheese
  • 1/2 cup panko breadcrumbs
  • 1 ½ teaspoons italian seasoning
  • fresh parsley (optional for garnish)


Instructions

  1. Preheat the oven to 425°F. Grease a 9×13-inch baking dish with nonstick cooking spray.
  2. Pat the chicken dry with paper towels. If necessary, gently pound the chicken breasts to achieve an even thickness. Place them in the baking dish and season both sides with salt and pepper.
  3. In a small bowl, combine the mayonnaise and parmesan cheese. Spread this mixture evenly over the top of each chicken breast.
  4. Sprinkle the panko breadcrumbs and Italian seasoning evenly on top of the mayo-parmesan layer.
  5. Bake uncovered for 18 to 22 minutes, or until the internal temperature reaches 165°F and the topping is golden brown. If desired, broil for an additional 1 to 2 minutes for extra browning.
  6. Allow the chicken to rest for 5 minutes before garnishing with fresh parsley and serving.
