Description

Crock Pot Turkey Noodle Soup is a delicious, homemade dish filled with tender turkey, egg noodles, and colorful veggies. Perfect for a warm, comforting dinner!


Ingredients

  • Shredded cooked turkey (2-3 cups)
  • Chopped onion (1 small)
  • Sliced carrots (3)
  • Chopped celery (2 stalks)
  • Minced garlic (2 teaspoons)
  • Chicken or turkey stock (6 cups)
  • Fresh thyme (2-3 sprigs)
  • Dried Italian herbs (1 teaspoon)
  • Kosher salt (1 teaspoon)
  • Pepper (1/2 teaspoon)
  • Egg noodles (3 cups)


Instructions

  • Combine onion, carrots, celery, garlic, turkey, stock, thyme, Italian herbs, salt, and pepper in the Crock Pot. Stir well.
  • Set the Crock Pot to HIGH and cook for about 3 hours.
  • Add egg noodles around the 2.5-hour mark and stir. Cook for an additional 30 minutes until noodles are tender.
  • Serve hot, garnished with fresh herbs if desired.

Notes

Store leftovers in the refrigerator for 3-4 days.
Freeze soup in airtight containers for up to 3 months.
For a gluten-free option, use gluten-free pasta instead of egg noodles.
